For years I carried 7-8 lbs of inflammatory water and called it "just my weight." I had symptoms every single day. I didn't recognize a single one of them as a symptom — because when something is constant, it stops looking like a signal and starts looking like you.

Then I eliminated my trigger foods, watched the inflammation drain off in ten days, and later proved the connection twice — once by accident on Cinco de Mayo, once deliberately in Vegas. Both experiments are documented on this blog, scale data and all.

Here's what I wish someone had handed me five years ago: the actual sign list, and the protocol that gives you answers.

The Signs Hiding in Plain Sight

(A note before the list: sensitivities are not allergies. A true food allergy — hives, swelling, trouble breathing — is an emergency and a doctor's territory, full stop. Sensitivities are quieter, slower, and this list.)

Digestive signs — bloating after meals you've come to accept as normal, alternating constipation and urgency, that "food baby" feeling hours after eating, reflux you manage with a nightly antacid.

Energy signs — the 2 p.m. crash that coffee doesn't fix, waking up tired after a full night, brain fog that rolls in 30-90 minutes after certain meals.

Body signs — puffy face in the morning, rings that fit differently day to day, joint stiffness with no gym explanation, skin that flares (eczema, breakouts) in cycles you can't connect.

Scale signs — this is the one nobody talks about: weight that swings 2-4 lbs day to day despite consistent eating, and a stubborn 5-10 lbs that no deficit seems to touch. Chronic inflammation holds chronic water. Mine was 7-8 lbs of it, and no amount of dieting was ever going to burn water. I wasn't fat in that water — I was inflamed.

Three or more of these, chronically? A sensitivity is worth ruling out. The good news: the test costs nothing and takes six weeks.

Skip the Blood Tests, Run the Protocol

The mail-order "food sensitivity panels" that test IgG antibodies mostly measure exposure — the foods you eat often light up regardless of whether they harm you. The scientific consensus is blunt: elimination and reintroduction is the gold standard, and it's free. Here's the structure:

Eliminate (3-4 weeks). Cut the usual suspects completely: gluten, dairy, and alcohol are the big three, with eggs, soy, and nightshades (tomatoes, peppers) as the second tier. In my case the culprits turned out to be wheat, cow dairy, tomatoes, and eggs — plus alcohol. Half-measures teach you nothing; "mostly gluten-free" is a wasted month.

Watch the first 10 days. If sensitivities were part of your picture, this is when it shows: a multi-pound water drop beyond normal diet response, a deflating midsection, mornings without the puff. Log daily weights — the pattern is the evidence.

Reintroduce one food at a time (week 5+). One trigger, a normal portion, then 72 hours of watching: scale, digestion, energy, skin, sleep. Clean? That food's fine — next one. A 2-4 lb spike with the old symptoms back? There's your answer, written in your own data.

One variable at a time. Reintroduce three foods at once and a reaction tells you nothing — this is exactly the mistake I made on Cinco de Mayo, and it took a second controlled test in Vegas to untangle it.
